Breakfast on the GO!

I'm not the only one who noticed.... my food and exercise blog posts have been.... well, non-existent. I promise I still eat food and move my body. I just haven't made time to blog about it. (SORRY!)

Here's a quick post about my fave winter breakfast food on the go...

PB Baked Oatmeal Muffins 

1. Preheat oven to 350 F. 
2. Grab a mixing bowl and throw together these dry ingredients: about 1.5 cups old fashioned oats, 1 tsp baking powder, 1/2 tsp salt, however much cinnamon makes your heart happy. Mix!
3. Melt about 3/4 cup peanut butter in the microwave (about 30 seconds), mix in some honey. Toss that into your dry oats. Add about 3/4 to 1 cup of milk, 1 egg (scrambled), and a splash of vanilla. 
4. Mix in whatever else makes you happy! I add chia seeds and fruit every time. Otherwise, I just add what I have around. 
5. Bake for about 35-40 min. 
6. THEN, if you're feeling extra excited about making these, melt a little more pb&honey to drizzle on top when they cool. 

YUM. I eat them cold on my way out the door (or sitting in my first lecture, let's be real). I'm sure they would be delicious warmed up or even with a serving of fruit or yogurt. 

They make me happy. Breakfast is my fave.

Tell The World I'm Coming HOME

I've been watching ticket prices for what feels like ages.
And finally, FINALLY, the universe decided I could find flights.

With my reward points, I just spent $7 for my round trip flight from New York to South Africa.
Yes, that means I'll still have to pay for a round trip from here to New York.
Yes, that means I'll have to take long bus rides to Botswana.

But above all else?

I'M GOING HOME. I have two sweet weeks to visit my loved ones in Botswana this summer and soak up some time with them before I walk down the aisle and marry my best friend.

BOTSWANA, I'm coming home.

2016 : Intention

I'm a fan of getting things done on my own time. And so, here is my overview of 2015 and my thoughts as I move into 2016. Two (almost three) weeks late is better than never.

As some of you may recall, I started a new tradition last year. I picked one word to live by for the year, rather than setting new years resolutions. I really liked the switch, because it constantly challenged me. It was vague and I could apply it to my life however I decided to.

My word for 2015 was CHOOSE.
I framed my word last year and wrote phrases to go along with it.

"Choose to be happy. Choose to let it go. Choose to forgive. Choose to enjoy the moment. Choose to laugh. Choose to play. Choose to be thankful. Choose to love yourself. Choose to remember. Choose to love. Choose to accept others as they are. Choose to look at life through rose-colored glasses. Choose to forget. Choose to acknowledge progress. Choose to reflect. Choose to challenge yourself. Choose to admit when you're wrong. Choose to take time for yourself. Choose to smile. Choose to be child-like. Choose to indulge. Choose to cherish. Choose to remind yourself that 'these-are-the-days!' Choose to be kind-to yourself and others. Choose to learn with curiosity. Choose to rest. Choose to embrace the imperfections. Choose to have and open heart. Choose to be vulnerable. Choose to help. Choose to serve. Choose to decide what's right for you. CHOOSE TO LOVE 2015 & ALL THAT IT BRINGS."

CHOOSE was a great word for 2015. I'm reluctant to let it go... and so I won't. I've decided to keep that word with me and CHOOSE a new word for 2016.

Ladies and gentlemen, my word for 2016 is

2016 has a lot in store for me. I'll finish my first year of medical school, marry my best friend, travel, finish my first semester of second year, and somehow step into 2017 as a smarter, stronger, married woman. There's going to be bumps. It's going to be hard. And it's going to be sweet. 

I want my word for 2016 to be INTENTION so that I remember to love, speak, and live with intention. I hope to be intentional with all my actions and be more present in each moment. I want to be mindful about how I spend each day, what I eat, how I learn, and how I love. I want to pay attention to where I put my energy and notice who and what gives me energy in return. I want to quiet my mind, sit with my thoughts, and express my intentions to others. I want to be kind to myself and trust in the path I have chosen. I want to choose to be intentional with all my days of 2016.

It's going to be a wild ride.
