I'm not the only one who noticed.... my food and exercise blog posts have been.... well, non-existent. I promise I still eat food and move my body. I just haven't made time to blog about it. (SORRY!)
Here's a quick post about my fave winter breakfast food on the go...
PB Baked Oatmeal Muffins
1. Preheat oven to 350 F.
2. Grab a mixing bowl and throw together these dry ingredients: about 1.5 cups old fashioned oats, 1 tsp baking powder, 1/2 tsp salt, however much cinnamon makes your heart happy. Mix!
3. Melt about 3/4 cup peanut butter in the microwave (about 30 seconds), mix in some honey. Toss that into your dry oats. Add about 3/4 to 1 cup of milk, 1 egg (scrambled), and a splash of vanilla.
4. Mix in whatever else makes you happy! I add chia seeds and fruit every time. Otherwise, I just add what I have around.
5. Bake for about 35-40 min.
6. THEN, if you're feeling extra excited about making these, melt a little more pb&honey to drizzle on top when they cool.
YUM. I eat them cold on my way out the door (or sitting in my first lecture, let's be real). I'm sure they would be delicious warmed up or even with a serving of fruit or yogurt.
